What is REAL barbeque?? Barbeque is meat...slow cooked for hours over a real wood fire. Cooked to tender perfection with an internal temperature of 190 degrees.
How do you tell REAL barbeque from the wanna be's ? ....the smoke ring. The smoke ring is when the outside 1/4 to 1/2" of the meat turns pink from real wood smoke. This is your guarantee of Authentic Southern barbeque and not an indication of undercooking. It's Real Pit Smoked Barbeque.
We do chicken, ribs, brisket, pulled pork and whole hog. Hell...we've even done bear! (see pic below)
Picnics....no problem. Pig roasts...no problem. Wedding receptions...no problem (we did our own!). We have a complete picnic package.
Pork Ribs (Spare or Baby Back)
Pork Ribs- We take pride in our award winning ribs! They are slow cooked over a mix of hickory and cherry wood. All ribs are hand rubbed and cooked for 5-6 hours on our custom made JR Enterprise cooker. The result is a mouth watering, fall-off-the-bone, one-of-a-kind taste experience.Pork Shoulder or Butts
This is as real as it gets! Classic pulled pork. Pork shoulders or butts are slow cooked for 12 hours using hickory & cherry wood. Our shoulders are rubbed with our own blend of spices to produce a one-of-a-kind flavor. The "bark" or outer crust helps to keep in all the succulent juices that leave the meat tender and full of smoky flavor. You can eat this on a bun with one of our own sauces or on a plate as it is...either way it's Southern barbeque at it's finest.Beef Brisket
Our beef brisket is rubbed with our own blend of spices after being carefully trimmed, then it's put on the cooker for a minimun of 12 hours. Brisket takes smoke beautifully as is evident in the smoke ring. It's cooked slow to retain it's juices so as to produce tender pieces of meat that are equally good plated as the main course or on a bun with some of our own sauce.Other Options
Little Creek Bar-B-Cue Co isn't limited to just pork and ribs. We can also do chicken, seafood or anything you can think of. All you have to do is ask....
Pig Roasts
Our basic package starts with just the pig, or we can do it all. The size of the pig will be determined by the number of your guests....sometimes it's more economical to do a smaller pig for "show" and add pork shoulders to the package to feed your guests. Pigs are cooked on site, and usually take 16-18 hours....so keep that in mind when booking a pig roast. We will need an area to set up the trailer ( 16') and Rich & co. will be there for the duration until the pig is done.School Events
We are available to supply 1/2 & full pans of pulled pork for you to sell at your school's basketball games, football games, etc. We ask that you give us a call two weeks in advance.
